The scouts went deep sea fishing near Sooke, BC, Canada and caught 72lbs of salmon. We could only consume 20lbs at camp.
This fish was boy caught, boy cleaned then professionaly processed.
The remaining 50lbs was sent to St. Jeans for smoking & processing and is now available.

Some packs have two small filets others have one big filet. (we have 40 packages of these)
West Coast Hotsmoke: This Style of smoked salmon is cured with spices and processed at a higher temperature to give the Salmon a moist but cooked texture. Serve wth crackers, cream cheese or in salads.
We also have a few packages (6) of the "Indian Candy" style smoked salmon.

Indian Candy: This is a hot smoke that is cut in thin strips. Halfway through the smoking process it is taken out and glazed with honey. No need to do much with this but to put it on a plate and eat it.
